Italian flavours, Australian ingredients
Digestivo has a long history in Italy. Some say the originals were made by monks and used for medicinal purposes. Each region has its own version and the ingredients are a closely guarded secret.
Earlier in 2023, Cosy Del's invited us to produce an all-Aussie version, with foraged ingredients if possible. No pressure, right?
A funny thing happened on the way to the bottle - I shared a progress sip with Mattia (Restauranteur, Italian as they come) and Dylan (Chef, loves a foraged ingredient). We have room in the tank, what should we add? Nothing, this is like my Nonna used to make. But we need to add more water or something to bring the ABV down, right? No, don't mess with it. OK then, I do as I'm told.
Digestivo, at 41.9%. Because nothing about this is traditional.
Here's what's in it:
Native: Pepperberries, wattleseed, lemon myrtle, quandong powder, boab segments, aniseed myrtle, peppermint gum, cinnamon myrtle, native thyme (see Mayi Harvests for WA grown, Aboriginal owned native botanicals)
Foraged or rescued: Rosemary, lavender stalks, lemon zest, lime zest, lilly pilly, finger lime
Aussie grown, always: Rhubarb, grapefruit zest, golden syrup, sugar
700ml, 41.9% ABV, approximately 23.1 standard drinks.
